Bread Pudding with Salted Caramel sauce

Bread pudding was kind of a forgotten dish till I got rekindled with memories when browsing on ways to use dinner rolls.

I had bread pudding for the first time when I was a kid. My mom made it for us and that too without an oven. I am surprised to look back on all the baking my mom did the hard way and it turned out to be our favorites.

Coming back to this recipe. Its a great way to make use of breads which remains unused or just to indulge in a very heart warming dessert which is simple and easy to make. The things needed to make this recipe are mostly at home. I also tried a basic homemade salted caramel sauce which went fantastically well with the pudding. You can try any topping sauce of your choice or just enjoy it the way it is. It is delicious and so tasty.

The video only covers the bread pudding. I have listed the steps for the sauce separately in the bottom if you like to try.

Nei Appam – Sweet rice based fritter

Nei Appam as it name stands is nothing but rice pancake fried in clarified butter (ghee). Also called as Unni Appam (for its small round shape). It is a very traditional dish from the state of Kerala in India and is also very popular in Tamil Nadu (India) and Sri Lanka.

A very delicious sweet snack and I can assure you it is very difficult to stop with one. Appam is generally made during festive occasions. It requires a special pan to get its round shape. The batter can also be cooked in a flat or curved pan if shape is not an issue. The recipe has very simple ingredients and easy to make.

There are variations to this recipe by adding banana. But I prefer this one to it. Hope you enjoy making it as well.

Mini Pavlova

A meringue based dessert with cream and fruit filling which is very popular in Australia and New Zealand. The origin of the Pavlova is still a subject of debate. It has a nice crusty outer with a marshmallowy inside. The cream along with the berry fruits blends so well with the taste of the meringue. Hope you enjoy the recipe.

Please watch the video for the method.

Note: In the final step of baking time. I tried 2 different settings.
1. 100 C for 1.5 hours and 30 mins cooling inside oven
2. 100 C for 1 hour and 1 hour cooling inside oven (this one was better)
